A leader Paso Robles’s vibrant culinary scene, Santos McDonal, is the executive chef and founder of Il Cortile and La Cosecha, both of which have been named a top wine restaurant by Wine Spectator (six consecutive years for Il Cortile; three consecutive years for La Cosecha).
Chef Santos’ career in Los Angeles helped him develop his philosophy to use the freshest ingredients, locally sourced whenever available to create interesting and delicious dishes. His creativity is expressed in two restaurants and his mobile kitchen, The Truck.
Il Cortile focuses on rustic Italian fare, featuring seasonally inspired menus using the freshest ingredients sourced from his favorite neighbor-growers. Chef Santos makes an array of exceptional homemade pastas, fresh seafood, top quality meat dishes and antipasti.
A favorite hangout of local winemakers, La Cosecha, Spanish for “the harvest,” centers on the cuisine of Spain, Honduras (where Santos hails from) and South America. The menu offers culture-specific dishes, specialized Latin flavors, while taking advantage of the farmer’s market-fresh produce, meats, and cheeses of California’s abundant Central Coast. It also features a rotating seasonal cocktail menu, and like Il Cortile, boasts a best-of-the-locals wine list.
You’ll also find Santos expressing his creativity via The Truck, a mobile kitchen available for pop-ups, winemaker dinners and beach parties throughout the Central Coast. Daily you’ll find The Truck at Sebastian’s in San Simeon.
