The magnificent Levantine Hill Estate is in Coldstream, Victoria. The property is planted primarily to Pinot Noir, Chardonnay, Shiraz, and Cabernet Sauvignon, along with smaller blocks of Sauvignon Blanc, Semillon, Merlot, Cabernet Franc, Malbec and Petit Verdot. Prior to joining Levantine Hill, winemaker Paul Bridgeman took over the reins at Yarra Yering after the passing of Dr. Bailey Carrodus, and over the years has worked internationally. With 20 Yarra Valley vintages behind him, he has an unusually light winemaking touch, producing remarkably elegant wines from the cool climate region. Paul favors wines that lean more toward savory character rather than fruity, and his wines reflect the best winemaking that the Yarra Valley has to offer.
The property was originally planted in the 1990s and encompasses two main vineyard sites, Maroondah Highway and Hill Road. Yields are kept at ultra-low levels to maximize quality, and the winemaking is as non-interventionist as possible. Fortuitously the property is also appropriate for the production of black truffles, many of which are used at the cellar door restaurant, Ezard At Levantine Hill, helmed by two-star Michelin chef Teague Ezard. The winery shop at the cellar door offers local artisan produce from the region in addition to the home-harvested truffles.
Construction of a new winery has begun and should be in full operation by harvest of 2021.
